𝐂𝐥𝐚𝐬𝐬𝐢𝐜 𝐌𝐮𝐭𝐭𝐨𝐧 𝐂𝐮𝐫𝐫𝐲 𝐫𝐞𝐜𝐢𝐩𝐞
Here's a classic Mutton Curry recipe that you can try:
Ingredients:
- 2 lbs (900g) mutton (goat meat), cut into bite-sized pieces
- 3 tablespoons oil
- 2 large onions, finely chopped
- 2 teaspoons ginger paste
- 2 teaspoons garlic paste
- 2-3 tomatoes, finely chopped
- 2 teaspoons red chili powder (adjust to taste)
- 1 teaspoon turmeric powder
- 2 teaspoons ground coriander
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro leaves, chopped, for garnishing
- Water, as needed
Optional:
- 1-2 green chilies, slit (for extra heat)
- 1 teaspoon ghee (clarified butter) for added flavor
Instructions:
1. Heat oil in a large pot or pressure cooker over medium heat. Add the chopped onions and sauté until they turn golden brown.
2. Add ginger paste and garlic paste. Sauté for another 1-2 minutes until the raw smell disappears.
3. Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
4. Add red chili powder, turmeric powder, ground coriander, cumin powder, and salt. Mix well and cook the masala for a few minutes to blend the flavors.
5. Add the mutton pieces to the pot and sauté for about 5-7 minutes, allowing the meat to brown slightly.
6. If using a pressure cooker, add enough water to cover the mutton. Close the lid and cook the mutton on medium-high pressure for about 20-25 minutes, or until it's tender. If using a regular pot, add enough water to cover the mutton, bring it to a boil, then reduce the heat to low and cover the pot. Let the mutton simmer for about 1.5 to 2 hours, or until tender, stirring occasionally and adding water if needed.
7. Once the mutton is tender, check the seasoning and adjust salt and spices if necessary.
8. Add garam masala and mix well. If using green chilies for extra heat, add them at this point.
9. If desired, add a teaspoon of ghee for added richness and flavor. Mix well.
10. Garnish with chopped cilantro leaves.
11. Serve the delicious Mutton Curry with steamed rice, naan, or roti.
