A simple and flavorful Chicken Curry recipe for you:

Ingredients:

- 1 kg (2.2 lbs) chicken pieces, bone-in or boneless, skin removed

- 3 tablespoons oil

- 2 large onions, finely chopped

- 2 teaspoons ginger paste

- 2 teaspoons garlic paste

- 2-3 tomatoes, finely chopped

- 2 teaspoons red chili powder (adjust to taste)

- 1 teaspoon turmeric powder

- 2 teaspoons ground coriander

- 1 teaspoon cumin powder

- 1 teaspoon garam masala

- Salt to taste

- Fresh cilantro leaves, chopped, for garnishing

- Water, as needed

Optional:

- 1-2 green chilies, slit (for extra heat)

- 1 teaspoon kasuri methi (dried fenugreek leaves)

- 1/2 cup coconut milk (for a creamy variation)

Instructions:

1. Heat oil in a large pot or pan over medium heat. Add the chopped onions and sauté until they turn golden brown.

2. Add ginger paste and garlic paste. Sauté for another 1-2 minutes until the raw smell disappears.

3. Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.

4. Add red chili powder, turmeric powder, ground coriander, cumin powder, and salt. Mix well and cook the masala for a few minutes to blend the flavors.

5. Add the chicken pieces to the pot and sauté for about 5-7 minutes, allowing them to brown slightly.

6. If using bone-in chicken, add a bit of water to the pot, cover, and let the chicken cook for about 15-20 minutes until it's partially cooked. If using boneless chicken, you can skip this step and move to the next one.

7. Add garam masala and mix well. If using green chilies for extra heat, add them at this point.

8. Add kasuri methi if desired, for a unique flavor.

9. If using coconut milk for a creamy variation, add it now and stir well. Let the curry simmer for another 10-15 minutes until the chicken is fully cooked and tender.

10. Check the seasoning and adjust salt and spices if necessary.

11. Garnish with chopped cilantro leaves.

12. Serve the Chicken Curry with steamed rice, naan, or roti.

Feel free to customize the recipe by adjusting the spices, adding vegetables, or altering the consistency of the gravy according to your preference. Enjoy your delicious homemade Chicken Curry!
