Here's a simple and delicious roast chicken recipe for you
Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil or melted butter
- Salt and black pepper to taste
- 2 teaspoons dried herbs (such as thyme, rosemary, oregano, or a mix)
- 1 lemon, halved
- Optional: Vegetables (carrots, potatoes, onions) for roasting
Instructions:
1. Preheat your oven to 425°F (220°C).
2. Pat the chicken dry with paper towels. This helps the skin get crispy during roasting.
3. Rub the chicken with olive oil or melted butter. Make sure to coat the entire surface.
4. Season the chicken generously with salt, black pepper, and the dried herbs. You can also season the cavity of the chicken with some salt and herbs.
5. Gently lift the skin on the breast and thighs of the chicken and rub minced garlic underneath the skin. This adds flavor to the meat as it roasts.
6. Place the halved lemon inside the chicken's cavity. This adds a wonderful aroma and flavor to the chicken.
7. If using vegetables, you can arrange them in the bottom of a roasting pan and place the chicken on top. The vegetables will cook in the delicious juices from the chicken.
8. Place the chicken in the preheated oven and roast for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C). You can use a meat thermometer to check the temperature.
9. If you prefer the skin to be extra crispy, you can increase the oven temperature to 450°F (230°C) for the last 15-20 minutes of roasting. Keep a close eye to prevent over-browning.
10. Once the chicken is cooked, remove it from the oven and let it rest for about 10-15 minutes before carving. This allows the juices to redistribute and makes for juicier meat.
11. Carve the chicken into serving pieces and serve with the roasted vegetables, if using.
12. Garnish with fresh herbs if desired and serve your delicious roast chicken!
