Malai Boti
Malai Boti is a popular Pakistani dish known for its creamy texture and rich flavors. Here's a traditional recipe to make Malai Boti at home:
Ingredients:
- 500 grams boneless chicken, cut into cubes
- 1 cup yogurt (preferably thick)
- 1/2 cup fresh cream (malai)
- 1 tablespoon ginger-garlic paste
- 1 tablespoon lemon juice
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon ground black pepper
- Salt to taste
- 2 tablespoons vegetable oil or ghee
- Skewers (if grilling)
### For Garnish (optional):
- Fresh coriander leaves, chopped
- Sliced green chilies
- Lemon wedges
### Instructions:
1. **Marinate the Chicken:**
- In a large bowl, combine yogurt, fresh cream, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, garam masala powder, black pepper, and salt. Mix well to form a smooth marinade.
- Add the chicken cubes to the marinade and coat them evenly. Cover the bowl and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
2. **Cooking Options:**
- **Grilling Method:** Preheat your grill. Thread the marinated chicken onto skewers and grill over medium-high heat until the chicken is cooked through and lightly charred, about 10-15 minutes, turning occasionally and basting with oil or ghee as needed.
- **Stovetop Method:** Heat oil or ghee in a large non-stick pan or skillet over medium-high heat. Add the marinated chicken cubes along with the marinade. Cook, stirring frequently, until the chicken is cooked through and the marinade thickens and coats the chicken pieces, about 10-12 minutes.
3. **Finish and Serve:**
- Once the chicken is cooked through and the sauce has thickened to your desired consistency, remove from heat.
- Garnish with chopped coriander leaves, sliced green chilies, and lemon wedges.
- Serve hot with naan, roti, or rice.
### Tips:
- Make sure to use thick yogurt and fresh cream (malai) for a richer texture.
- Adjust the spice levels to suit your preference.
- If grilling, soak the skewers in water for 20-30 minutes before threading the chicken to prevent them from burning.
- For a smokier flavor, you can also cook the marinated chicken in a tandoor or oven.
